French-born Master Patissier Jean Michel Raynaud is the Owner / Executive at La Renaissance Patisserie in Sydney’s The Rocks District. With an international reputation that has seen his works recognised, replicated and showcased around the world in books, magazines and on TV, Jean Michel has gained notoriety as one of the most highly respected Pastry Chef’s in Australia.

Prior to joining La Renaissance, Jean Michel spent time as the creative Head Chef at Sweet Art and also Planet Cake. Jean Michel’s past tenures have seen him work on cakes for celebrities, politicians, sport stars and Hollywood legends including the likes of Delta Goodrem and Bec & Lleyton Hewitt.

Jean-Michel began his incredible career under the tutelage of master Patissier, Robert Schicci in Marseille. Jean-Michel’s exceptional talents for pulling sugar, piping and chocolate carving ensured his meteoric rise to head pastry chef by the age of 20. Working in the kitchens of some of the world’s most recognised institutions followed, including famous 3-Michelin starred French restaurant “Le Petit Nice”.

Jean Michel has recently released his first book ’The French Baker’, a stunning collective of tips and delicious recipes that will have you baking your own French sweets and savouries in no time. You’ll get a chance to see Jean Michel at the show demonstrating a few of his favourite recipes from the book, as well as sharing years of expertise and baking tips in the classrooms.
